





DUBAI: Dubai’s Japanese restaurant, TakaHisa, has collaborated with Japan’s Sushi Jin for a limited edition menu from June 9 to 11, showcasing Japan’s tasty cuisine using authentic ingredients.
TakaHisa’s chefs joined forces with Sushi Jin’s Izumi Kimura, a renowned self-taught sushi chef. The menu included unique ingredients that are not usually found in other Japanese restaurants in Dubai, such as three different kinds of trout.
The three chefs cooked the delicious delights while participants carefully observed, starting with a Maguro Warayaki, which is a rapidly cooled fatty tuna mixed with straw salt.
The chefs, then, introduced the first kind of trout in a special dish called Masu Tataki, which is made of Sakura-masu marinated with sesame and ginger.
The renowned Japanese chefs also prepared special dishes such as steamed abalones with special sauce, squid with red vinegared rice, and Japanese trout Tokishirazu marinated with miso and sesame.
The highlight of the menu was the sushi omakase, which introduced various types of sushi sourced directly from Japan, such as unagi and cucumber hand rolls, jumbo shrimp from Toyama, and grilled Masunosuke trout.
The chefs concluded the menu was a special twist on somen noodles as they mixed it with cloud ear fungus in seafood espresso soup. The guests cleansed their palate with rice monaka wafer with milk flavored mochi ice cream.
