After making an appearance at Dubai Expo 2020, Japan’s popular revolving sushi chain Sushiro is back for Expo 2025 Osaka Kansai with a new concept: “Sushiro to the Future: Expo Edition.”

The restaurant will operate from April 13 to October 13 in the Forest of Tranquility area, combining technology, fun and a focus on sustainability.

With a bold and colorful exterior, the Expo Edition offers a unique dining setup. At each table, a large touchscreen display shows floating digital plates of sushi and sides.

Tap to order, and the real plate will arrive via conveyor belt. Each table also has a small ramp to safely pull dishes from the shared belt, keeping things fast and smooth.

A fun new feature exclusive to this location is the Uni Catch Game. At random times, the screens turn into a game where diners tap on as many sea urchins, or “uni,” as they can within a time limit. The top five tables win prizes, with staff cheering everyone on.

But the real look into the future comes from the food itself. All seafood served at this Sushiro is farmed on land in a way that reduces pressure on oceans.

This includes fish, shellfish, and seaweed. On the menu: uni, mackerel (saba), bikara unagi, kawahagi, anago, salmon, shima aji, mibai, and kanpachi—all priced between 270 and 550 yen per plate.

To cater to global visitors, all dishes are halal, and there are five plant-based options for those with dietary preferences.

The land-farmed seafood is said to offer a cleaner taste and texture thanks to controlled diets and environments.
