Japanese ramen chain to branch out with plant-based, vegan dish

Japanese ramen hotspot, Ippudo, is catering to a variety of culinary preferences with their latest menu expansion.

Their newest ramen dish is made using meat-free ingredients, appealing to the likes of vegan ramen lovers in Japan.

The latest plant-based Akamaru, will be offered starting Feb 1 for $10.60 USD.

Ippudo will be using a meatless broth, and noodles made using whole grain flour and free of eggs. The dish will also be complemented by porcini mushrooms, and a green bean paste.

Like most of the ramen dishes sold at Ippudo, this one will still uphold the rich flavours by utilizing soymilk and kelp soup stock, and can be enjoyed at one of the 44 stores in Japan.

Ippudo began in 1985, in in Daimyo, Chuo-ku, Fukuoka city and eventually opened its first Tokyo ramen shop in 1995. In 1996, the chain launched two signature dishes, their “Shiromaru Classic” and “Akamaru Modern.”

In Japan, IPPUDO Nishikikoji  was awarded the “2014 Restaurants Popular with Foreign Visitors” and ranked number one in the ramen shop category. 

To date, the chain has opened branches in Hong Kong, Taiwan, China, UK and the US, amongst others—making its mark worldwide as a leading ramen spot, but the chain’s latest vegan dish has yet to be made available in stores outside of Japan.
