

DUBAI: Launching on April 15, UAE’s renowned Japanese restaurant is collaborating with Michelin-starred Chef Gregoire Berger for a special omakase menu that will be available in the Dubai and Abu Dhabi branches.
Chef Gregoire brings his creative vision to Sushi Art with a well-crafted, personalized menu that takes guests on a journey of tasty flavors.
“This menu is personal,” he said. “It’s inspired by the sea, memory, family, and my long-standing relationship with SushiArt. I wanted each dish to feel intentional yet playful. Familiar, yet elevated.”
The menu features an eight-course experience, starting with Black Sesame Dynamite Shrimp, a bold take on a classic and a nod to Chef Berger’s favorite color. Served tableside, the shrimp is coated in charcoal-infused tempura batter, topped with umeboshi-pink sesame, and presented atop a bed of crispy black noodles for a theatrical start.
The menu will also feature nashi pear and cabbage coleslaw spring rolls, crispy shiso tacos with salmon and kalamansi, as well as obsiblue roll with blue rice and tom kha, which combines a rare naturally blue Obsiblue prawn with blue spirulina-infused rice and creamy coconut-based tom kha.
Guests will also indulge in a torched Wagyu nigiri paired with cherry BBQ sauce that pairs together flame-kissed wagyu, marinated cherries, and black pepper for a smoky, playful bite with hints of fire and spice.
The menu concludes with matcha ganache mochi with black tea crumble and milk yuzu lemongrass sauce and a chocolate tart with vanilla and buckwheat, giving the Omakase experience a sophisticated ending.
