ABU DHABI: Glow Sushi Bar was one of the main attractions in Animenia section at the Mother of the Nation (MOTN) Festival, which was held in Abu Dhabi from Dec. 9 to 18.

Glow Sushi Bar is the world’s first glow-in-the-dark sushi bar formed by a collaboration between internationally renowned culinary designers, Bompas & Parr and trendy and regional favorite Japanese eatery Akiba Dori to feature Japanese cuisine reimagined with a focus on innovation and the visual appeal of food.

It endeavors to bring the wider themes of entertainment and indulgence together in the best spirit of food, community and creativity.

Rian Coulter, one of the project managers of Bompas & Parr Studio in London shared exclusively with Arab News Japan the story behind the idea of Glow Sushi Bar collaboration with Akiba Dori: “We loved to make things glow in the dark, so we have created everything that glow in the dark such as: jellys, noodles, pancakes & other things that resonate the pavilion at MOTN festival to create something that being connected to this pavilion as well to give people something new & unique to try it such as sushi.”

About the secret of the glow in the food at Glow Sushi Bar, Coulter said: “They said that when it comes to food, the first taste is with the eyes so, when the food looks appetizing that’s a good sign & important to tell if it’s fresh & something to be consumed. The secret behind the glow is a proteinic natural ingredients that glow & illuminate in the dark with ultraviolet lights like mushrooms with a mixture of other ingredients to release the same glow with food coloring to give you the variety of colors.”

About the feedback that they got from the people who visited Glow Sushi Bar, Coulter said: “We were very excited to be at MOTN festival & we were pleased to see the reaction & feedback of the people who tried our food & experiencing something that never happened before to tell the story about it.”
